Cajun Red Beans and Rice
This is a quick and easy version of a Cajun favorite
Servings 6
- 1 tbsp olive oil
- 1/2 onion, chopped
- 1/2 green pepper, chopped
- 4 stalks celery, chopped
- 13 oz smoked sausage
- 5 cans red beans
- 1-2 tsp cajun seasoning
Pour olive oil into a large pan. Sautee onion, green pepper and celery on medium heat until translucent, about 5-6 minutes.
Add smoked sausage to pan and cook until sausage just begins to get brown marks on it.
Add canned beans and Cajun seasoning and bring to a simmer. Let simmer 30 minutes to an hour.
Serve over steamed rice
