Italian Sausage Tortellini Soup

This hearty soup packs lot of Italian flavors

Ingredients

  • 1 lb Italian Sausage
  • 1 c onion, chopped
  • 2 cloves garlic, minced
  • 5 c beef broth
  • 1/2 c water
  • 1/2 c dry red wine
  • 15 oz diced tomatoes
  • 1 c carrots, thinly sliced
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 8 oz tomato sauce
  • 1 1/2 c zucchini, sliced
  • 10 oz cheese filled tortellini
  • 1 Tbsp dried parsley

Instructions

  • In a soup pot, brown Italian sausage with onion and garlic.  Drain fat from pan
  • Add all ingredients to soup pot except zucchini, tortellini and parsley.  Simmer 30 minutes.
  • Then add zucchini, tortellini and parsley.  Continue simmering until zucchini and tortellini are tender.
  • Serve with crusty bread and fresh grated parmesan cheese
