This iconic soup is a customer favorite at Nordstrom Cafe.

Ingredients
1/3cextra virgin olive oil
1yellow onion, finely chopped (about 8 oz.)
1ccarrots, peeled and finely chopped
1 1/2tspkosher salt
1/2tspfreshly ground black pepper
2 tspdried basil
56oz.San Marzano or Italian Style plum tomatoes in juice
1quartvegetable stock
16oz.heavy whipping cream
1/2ozfresh basil leaves
Instructions
Heat olive oil in a large dutch oven over medium high heat. Add onion and carrots. Let cook 3-4 minutes until vegetables soften and start to caramelize.
Add salt, pepper and dried basil. Stir and let cook for 1 minute.
Add tomatoes and broth. Cook 20-25 minutes on a low simmer.
Add cream and cook 5 more minutes.
After cream has cooked for 5 minutes, add fresh basil and puree soup with an immersion or regular blender. Make sure soup is completely pureed.
Serve in bowls with additional fresh basil for garnish.
